THE STORY OF MARTHA, ELIAS AND SHADY

Back in 1995, the Bayter/Montenegro Family rolled up their sleeves and dove headfirst into the agricultural scene at El Vergel farm. Avocado was their main squeeze, but when avocado prices dived in 2006, they knew it was time to shake things up. So, they tossed some coffee varieties into the mix – catimore, red, yellow caturra – and there, a coffee empire was born!

Fast forward to 2016, and with guidance from coffee guru Miguel Jimenez, they planted specialty coffee varieties, setting the stage for some serious coffee greatness. They embraced natural coffee processes in 2018, tinkering with fermentation control. Their claim to fame? The Koji fermentation process, a game-changer for green coffee.

Together, they're not just brewing coffee; they're brewing up a whole community revolution! Their mission? To blend tech magic with coffee passion and sprinkle a little extra joy into the lives of everyone at El Vergel Estate.

The journey of Guava Banana coffee begins with the careful selection of ripe Red and Yellow Caturra cherries, ensuring exceptional quality from the renowned El Vergel Estate in Fresno. The beans undergo a 48 to 60-hour anaerobic fermentation, which enhances their unique flavor profile. Initially dried in the sun on raised beds in a "Marquesina" until they reach 30% moisture, the beans are then moved to mechanical drying in circular dryers at temperatures below 45°C until they achieve 18%-16% moisture. 

After a pre-stabilization stall to intensify flavors, the drying process is completed mechanically until optimal moisture is achieved. The beans are then stabilized for 45 days in GrainPro bags, ensuring consistency and quality. This meticulous natural anaerobic process results in a rich and complex flavor profile with notes of banana, tropical fruits, molasses and dried mango. What's the difference between a regular single origin and showcase coffee?

Across our blends and single origins, we always source high-grade, high-quality coffee from across the globe, so that every bean is traceable and has been produced in expert conditions to create standout flavour profiles. They are typically larger crops with regular availability

With showcase coffees, these are produced in much smaller quantities, grown and developed with specialised methods, and use innovative processing methods to create exciting and unique flavours not readily available in the coffee market. The farmers and producers themselves will be industry pioneers, looking to push the boundaries of sustainable and flavourful farming and production, to excite and delight coffee enthusiasts (and roasters!) around the world.

Why are Red and Yellow Caturra beans so special?

Red and Yellow Caturra coffee beans are considered good for their balanced, sweet, and citrusy flavor profiles, bright acidity, and clean cup, making them popular among specialty coffee roasters - including us!

  • Red Caturra: Known for sweeter notes of chocolate, grapefruit, and berries. 
  • Yellow Caturra: Offers tropical fruit flavors and a brighter citrus acidity, almost lime-like, while still retaining Caturra's typical cacao notes.
How long will my beans stay fresh?

We believe coffee beans are at their peak 10 days post-roasting, giving the beans time to rest and develop fully. Beans are best enjoyed 2-4 weeks from opening, and will keep fresh up to 6 months.

What taste/flavour profile should I expect?

Guava Banana has notes of banana, tropical fruits, molasses and dried mango, with a syrupy body. These notes will stand out more than others depending on your brewing method - if you use a V60, there will be a stronger tropical and syrup flavour; with espresso, you'll get a delicious and light sweet fruity coffee.

Our showcase coffees are an online exclusive, and very limited quantities, so we'd recommend purchasing online before we run out! However, if you are local to our roastery or cafe, you can pop in to try a sample on filter.
