July Coffee of the Month + Brew Guide: Burundi Izuba

Introducing our July Coffee of the Month - Burundi, Izuba - Mugoyi.

Located in Runinya, Kabarore Commune, of Kayanza Province, the Izuba washing station is set close to a nearby river, providing a vital and regular freshwater source for coffee processing. 

Izuba, meaning “sun” in Kirundi, is situated near to the Kibira national park, where the soil and climate are paired well for fantastic coffee production. The coffee is grown and collected on Mugoyi, one of the three hills surrounding Izuba. 

This natural Red Bourbon offers notes of blackberry, sea salt dark chocolate and bergamot and is another great coffee sourced by the Raw Materials team.

Brew Guide

  1.  Place filter paper into V60 and wet. Weigh out 20g Burundi coffee and grind to a medium setting.
  2. Weigh out 150g ice into the coffee server, before placing V60 on top of the server. Place coffee into filter paper and level. Tare scales and heat water to 96°C ideally.
  3. Set a stopwatch and begin by pouring 40g of water onto the centre of the coffee, ensuring all grounds are saturated, stirring or swirling if required. 
  4. Wait until the timer reaches 30 seconds, allowing for the coffee to bloom, releasing gases and oils from the coffee. Then, pour in concentric circles around half a centimetre away from the edge of the coffee until you reach 90g of water. Slowly raise the brewer, swirl coffee and tap it onto the top of the server to ensure grounds are flat, therefore ensuring an even extraction.
  5. Allow for the coffee to steep by a cm, before pouring in concentric circles, raising coffee to 120g. Swirl and tap.
  6. Then, pour up to 1500g, swirl and tap the brewer and allow for all the water to draw down through the coffee, aiming for an extraction time of between 2-2.30.
  7. Let the coffee sit for a minute, allowing the ice to melt slightly, before swirling and pouring the coffee into your cup from a height to aerate the coffee.
  8. Enjoy a juicy, refreshing iced pour over!
