Cherry Velvet Brew Guide - V60

Cherry Velvet represents the highest quality coffee Small Batch produces. It’s a coffee made to be savoured, slowly, and with intent. Here's how to craft the delicious cherry brandy flavour on a V60 at home, created by Wellington House Head Barista, Jude.
Before you begin:
Grind 17.2g coffee to a medium grind, similar to salt. We crafted this recipe using the Fellow Ode Brew Grinder Gen 2.
Recipe
- Place your V60 on top of a jug. Put filter paper in the V60 and wet to remove any paper taste or residue.
- Heat water in a kettle to 90 celcius.
- Pour 17.2g of coffee into your V60 and tare scales. Now you're ready to pour!
- Start your timer - begin pouring 40g of water in circular motions until you reach 30 seconds on the timer. Pause to let the coffee bloom, and then swirl the V60 so all the coffee grounds are covered.
- Once the water has extracted, pour 50g of water in circular motions until the scales reach 90g. Let the water extract for 30 seconds, and then swirl and tap again.
- Next, pour 50g of water until the scales reach 140g. Repeat the bloom, swirl and tap motions for 30 seconds.
- After the water has extracted, pour 50g until the scales reach 190g. Repeat the bloom, swirl and tap motions for 30 seconds.
- Finally, pour 50g of water until the scales reach 240g. Do one final bloom, swirl and tap for 30 seconds.
- Remove the V60 filter and dispose of the grounds. Pour your coffee in your favourite mug and enjoy!
