Nicaragua Sajonia

This unique lot is the result of a colaboration between two passionate producers from the highlands of Jinotega: Servando Evaristo Duarte of Finca La Lapa in Yalí, and Lorenzo Efraín Siles Palacios of Finca Los Angeles in San Rafael del Norte. Though their farms are distinct in history and character, they are united by a shared commitment to quality, sustainability, and family legacy. Finca La Lapa, named after a beautiful local bird, was founded by Servando when he was just 13 years old. With determination and a machete, he began cultivating a piece of land gifted by his father. Over the years, he has transformed it into a thriving 26-hectare farm at 1,300 meters above sea level. Meanwhile, Finca Los Angeles, located at 1,270 meters, has been in Lorenzo’s family for three generations. Originally a mixed-use farm with cattle, it is now fully dedicated to coffee, managed by Lorenzo and his two sons. Fermentation is carefuly managed on both farms. At La Lapa, cherries are sorted by variety, pulped and fermented for 18 to 24 hours depending on weather conditions, then washed and aired in crates before drying. At Los Angeles, fermentation lasts 18 to 21 hours, with manual testing to determine the perfect washing point. The beans are then sun-dried over 10 to 15 days, with constant monitoring to ensure optimal moisture levels. Environmental stewardship is central to both operations. La Lapa reuses coffee pulp as organic matter and has established live barriers to connect with the nearby El Volcán hil. Los Angeles is cultivated under an agroforestry system, intercropped with citrus, walnut, and musaceous plants, and managed with 25–30% shade cover. Windbreaks and plant barriers help protect the land and promote biodiversity. La Lapa has participated in Cup of Excelence competitions, and Los Angeles benefits from a denomination of origin designation for its region. Their success is rooted in thoughtful fermentation, varietal separation, and a deep respect for the land. Together, the La Lapa & Los Angeles lot offers a vibrant and expressive cup that reflects the dedication, heritage, and innovation of two families working in harmony with nature.
